A favorite transformation of a Mai Tai to the Thai version, the My Thai, involves adding some “heat” from a Thai chili pepper muddled with Grand Marnier then mixing with coconut milk, which helps to mellow some of the pepper’s spicy bite. Fresh pineapple juice adds just the perfect amount of sweetness to complete this makeover. The My Thai is a wonderfully unique drink that can be enjoyed with friends at a dinner party, or even better, on the deck of our authentic sailing vessel, Star Clipper, while sailing in Southeast Asia.

INGREDIENTS
1 Thai chili pepper
3/4-ounce Grand Marnier
2 ounces rum
3/4-ounce squeezed lime juice
3/4-ounce pineapple juice
1/2-ounce Thai coconut milk
Garnish: pineapple wedge
Garnish: Thai chili pepper

DIRECTIONS
1. Muddle (gently) the Thai chili pepper and Grand Marnier.
2. Add the remaining ingredients with ice and shake about 1 minute.

3. Double-strain into a mug filled with fresh ice.
4. Garnish with a pineapple wedge and a Thai chili pepper
